Buffalo Chicken Quesadillas

Shredded Buffalo Chicken in a cheesy quesadilla- it's fast, delicious, and a crowd-pleasing meal you'll want to make again and again! 

Buffalo chicken is one of my absolute favorites, and I’ve made it my personal mission to serve it up as many ways as I possible can. Tonight, that looks a lot like this cheesy, smoky Buffalo chicken quesadillas! These are the REAL DEAL!

Epic Quesadillas with Buffalo Chicken

Any way I can sneak the flavor load of tender cooked buffalo chicken into a meal, I do. Wraps? You bet. Buffalo chicken pizza? For sure. Quesadillas… why not! So that’s how we got here, and I’m so happy you came.

While sometimes I put my slow cooker to work to make tender Buffalo chicken that I can use to build all kind of delicious Buffalo meals, on busy weeknights, I solve dinner with a rotisserie chicken. You shred it, add the sauce, and BOOM! It’s ready to go!

I have to admit, these Buffalo chicken quesadillas may require minimal effort but it brings down the house with the smoky, tangy, bold Buffalo sauce. Oh wait, I almost forgot the blue cheese crumbles and dressing. YES! Buffalo chicken by itself is pretty spectacular, but these crumbles and drizzles take these quesadillas up a notch.

Ingredients

It doesn’t take much to bring these quesadillas together, and if you cook the slow-cooker buffalo chicken ahead of time or have leftovers, dinner is ready in less than 10! Check out what you need:

  • Chicken breasts: boneless, skinless chicken breasts to slow cook or use rotisserie chicken to save time. Have Buffalo chicken leftovers? Even better!
  • Buffalo sauce: it can be homemade or store-bough.
  • Flour tortillas: there’s no quesadillas without them!
  • Shredded Cheddar cheese: for deliciously gooey quesadillas!
  • Blue cheese crumbles: more cheese!
  • Butter: for grilling.
  • Ranch or Blue Cheese dressing: you choose!

How to Make Buffalo Chicken Quesadillas

When I have cooked Buffalo chicken, dinner is a couple of tortillas and handfuls of cheese from being done which means you get more time to do important things. Now that’s a family dinner idea I can get behind! Here are the steps to make these quesadillas with Buffalo chicken:

  1. Prep the chicken
    Cook the chicken with Buffalo sauce in the slow cooker or shred a rotisserie chicken and combine it with the sauce. If you have leftovers, jump to the next step.
  2. Grease and heat a large non-stick pan
    The trick to getting a perfect golden-brown tortilla is to start with a hot pan.
  3. Top the tortillas
    On one tortilla, layer the shredded chicken, cheese, and blue cheese. Top with another tortilla and place it in the hot pan.
  4. Grill
    Grill for 3 minutes or until the cheese begins to melt. Flip and grill for another 3 minutes or until the cheese is completely melted. Remove from the skillet and repeat with remaining quesadillas.
  5. Serve
    Slicing the tortilla, top with additional Blue cheese and a drizzle of Ranch dressing, or Blue cheese dressing, if that’s your thing.

Homemade Buffalo Sauce 

If there’s anything on the table that involves Buffalo sauce – you can count me in! While bottled sauce does the job, there is nothing like my homemade buffalo sauce. It’s perfect for dipping, dunking, and cooking and easy to make with pantry ingredients such as hot sauce, vinegar, Worcestershire, butter, and seasonings.

How to Store Quesadilla Leftovers

There’s a way to store cooked quesadillas, so they don’t get mushy and soggy. Maybe you cooked extra for lunch tomorrow or to keep on hand; either way, you can store cooled and sliced quesadillas in an airtight container, wrapped in a paper towel. The paper helps to absorb any moisture and keep the quesadillas intact. 

I like to reheat my quesadillas in a pan, so the tortilla gets crispy, and the cheese melts, again!

Ingredients

  • 1 pound chicken breasts, boneless, skinless
  • ¾ cup buffalo sauce
  • 8 8-inch flour tortillas
  • 1 cup shredded Cheddar cheese
  • ½ cup blue cheese crumbles
  • Butter, for grilling
  • Blue cheese or Ranch dressing, for serving

Instructions

Prep the chicken:

  • Place the chicken breasts into the dish of a slow cooker. Pour the Buffalo sauce over the chicken, and stir to combine. Cover and cook on low for 7 to 8 hours or high for 4 to 5 hours. If you have rottiserie chicken, jump to the next step.
  • Once the chicken is cooked through, shred the meat with two forks and toss to coat with the sauce.

Assemble:

  • Place the tortillas on a flat surface. Top 4 tortillas with the chicken, Cheddar cheese, and blue cheese. Assemble the quesadillas.

Grill:

  • In a large skillet, melt butter over medium-high heat. One at a time, place the quesadillas into the skillet and grill for 3 minutes or until the cheese begins to melt. Flip and grill for another 3 minutes or until the cheese is completely melted. Remove from the skillet and repeat with remaining quesadillas.
  • Slice and serve with Ranch or Blue cheese dressing.
