Quick Buffalo Chicken Nachos with Rotisserie Chicken
My family and I can never have enough of all things Buffalo chicken. So when in doubt, I grab a rotisserie chicken from the store and build an epic meal with our favorite sauce, like these beyond-epic Buffalo chicken nachos.
From Buffalo chicken baked sweet potatoes to Buffalo chicken tacos, this delicious combo satisfies cravings, fills bellies, and makes this mom happy when serving a homemade meal after only 15 minutes in the kitchen -or less.
Ingredients
These amazing nachos are made with shredded rotisserie chicken infused with store-bought or homemade Buffalo sauce, and I make them extra cheesy with shredded cheese and blue cheese crumbles. Finally, you’ll need thick tortilla chips for the base and your favorite toppings (mine is Ranch dressing!).
How to Make Nachos with Buffalo Chicken
Shred the rotisserie chicken and coat it well with the Buffalo sauce. You can shred it ahead to save time! Assemble the layers on a sheet pan: tortilla chips, cheese, Buffalo chicken, and cheese again. Bake for 10-12 minutes at 350F to melt the cheese and warm up the chicken.

In this recipe, I top these Buffalo chicken nachos with Ranch dressing and chopped green onions. Other delicious toppings you can add are blue cheese dressing, guacamole, sour cream, chopped red onion, or black olives.

Buffalo Chicken Nachos

Ingredients
- 2 cups cooked rotisserie chicken, shredded
- ½ cup Buffalo sauce
- 8 ounces thick tortilla chips, about 6 handfuls
- 1 ½ cups shredded cheese, Cheddar or Mexican mix
- ¼ cup blue cheese crumbles
- ⅓ cup Ranch dressing
- Chopped green onions, optional for topping
Instructions
Prep:
- Preheat the oven to 350F and position the top oven rack in the middle of the oven. Line a sheet pan with parchment paper.
- In a medium bowl, combine the rotisserie chicken with the Buffalo sauce until the shredded chicken is coated well. If using chopped chicken breasts or thighs, chop the chicken into small pieces first.
Assemble the nachos:
- Spread the tortilla chips on the parchment paper. Sprinkle half of the shredded cheese over the tortillas and half of the blue cheese. Top with the Buffalo chicken.
- Distribute the remaining shredded cheese and blue cheese over the nachos.
Melt 'em
- Place the layered nacho tray in the preheated oven and bake it for 10 to 12 minutes until the cheese looks melty and the chicken is warm. Remove the tray from the oven.
Serve:
- Drizzle the Ranch sauce over the nachos and sprinkle chopped green onions over the top.
- Enjoy the nachos from the baking sheet, or gently lift the parchment paper and slide a wooden board big enough to hold the nachos underneath.
