Fluffiest Recipe for Chocolate Chip Banana Pancakes

I’m a firm believer that the fluffier the pancakes, the better, and this recipe for chocolate chip banana pancakes does not disappoint even when you mix the bananas right into the batter.

This is one of those pancake recipes with a batter that’s on the thick side, especially since you’ll be adding mashed bananas right into it; but after a couple of minutes of cooking, you’ll be building incredible banana pancake stacks.

Ingredients

You’ll find the measurements for these chocolate chip banana pancakes in the recipe card. Before you make any swaps, check out where any substitutions can be made in this ingredients list:

  • Flour: regular all-purpose flour or this gluten-free flour work. You can also follow this recipe for banana oatmeal pancakes and just add the chocolate chips.
  • Sugar: a little in the batter, can be omitted.
  • Baking powder: the secret to fluffy pancakes. Without it, the pancakes will not rise.
  • Milk: regular milk or a dairy-free alternative works in this recipe.
  • Bananas: the riper, the better! Even the mushy ones you were going to use for banana bread work here.
  • Egg: to bind the ingredients. This recipe will work with one of these egg substitutes for pancakes, although the texture will be slightly different.
  • Butter: adds moisture to the pancake texture.
  • Vanilla: enhances the banana and chocolate flavor and will make these taste like banana bread with chocolate chips!
  • Chocolate chips: measure with your heart. Regular, mini, or chunks.

How to Make Them

Making these banana chocolate chip pancakes is simple. Here are a few tips beyond the recipe that ensure success:

  1. Measure the dry ingredients
    Combine the flour, sugar, and baking powder in a large bowl.
  2. Whisk the egg and mash the banana
    Doing these in a separate bowl first will ensure you don’t overmix the batter.
  3. Combine the dry and wet ingredients
    Mix the pancake batter just until no visible lumps appear.
  4. Add the chocolate chips
    Gently fold the chocolate chips into the batter bowl. They tend to sink so I typically grab the batter from the bottom up when I scoop it.
  5. Cook the pancakes
    Make sure you pour the pancake batter on a hot surface. This avoids undercooked pancakes in the middle.
  6. Serve
    Keep the pancakes warm while you cook the rest of the batter, and stack them high for everyone to enjoy.

Why Are My Banana Pancakes Soggy?

Soggy pancakes are a common “pancake fail” with banana pancakes because either the bananas didn’t get evenly distributed in the batter or the heat source was too low. They should be cooked on medium to medium-high heat for about 2 minutes and flipped over when you see defined edges and bubbles begin to form.

Ingredients

  • 1 ½ cups flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 ¼ cups milk
  • 2 medium ripe bananas, mashed (about 1 cup)
  • 1 egg, beaten
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla, optional
  • ½ cup chocolate chips, divided

Instructions

Make the pancake batter:

  • In a large bowl, combine flour, sugar, and baking powder.
  • Make a well in the middle and add the milk, mashed bananas, egg, melted butter, and vanilla. Whisk to combine the wet ingredients, and then begin to whisk the batter from the outside in, until there are no visible lumps. Add the chocolate chips to the batter bowl and fold them in to combine.

Cook the pancakes:

  • Heat a large non-stick pan or griddle over medium-high heat. Once hot, spray or grease with butter or oil and immediately pour about ¼ cup of batter per pancake.
  • Cook the first side for about 2 minutes until the edges are defined and bubbles form in the middle. Flip and continue cooking on the other side for another minute. Don't press the pancakes down after fliipping. Remove from the griddle or pan onto a plate and repeat the process with the remaining pancake batter. Makes about 12 pancakes.

Serve:

  • Top your pancakes with sliced bananas, additional chocolate chips, and syrup.

Notes

Use the right baking powder: Since pancake batter naturally has a mild, neutral flavor, it’s important to use aluminum-free baking powder. The metallic flavor will ruin the taste, especially in fluffy pancake recipes that call for 2 or more teaspoons. Trust me on this one.
