Avocado Toast with Cottage Cheese

Cottage cheese is here to stay, and I have to say that the extra dose of protein is more than welcome! I use it for everything, from cottage cheese oatmeal to banana pancakes, and now, my friends, cottage cheese avocado toast!

Avocado is one of my favorite toppings from breakfast to dinner, so this recipe has everything I love in each bite -and it’s the best possible company for my beloved morning coffee. It’s delicious, super nutritious, and ridiculously easy to make on any busy morning.

Sometimes I enjoy a delish cottage cheese and avocado bowl, but when I crave the crunchiness of freshly toasted bread, nothing can beat this incredible breakfast!

Health Benefits of This Toast

Avocado cottage cheese toast is one of the most nutritious breakfasts. According to the USDA, cottage cheese is a rich source of protein with 11 grams per 100 grams. It also provides 103 mg of calcium per 100 grams.

Furthermore, avocado is packed with fiber, vitamins, and minerals, especially potassium. With 576 mg of potassium per 100 grams, avocado has 250 grams more than the same amount of banana!

Ingredients

Here’s what you need to make cottage cheese avocado toast and enjoy a high-protein meal that tastes delicious:

  • Toasted bread: use your favorite to make medium, firm toast.
  • Cottage cheese: any cottage cheese you like. If you don’t like the texture, you can make whipped cottage cheese for a smooth and creamy alternative.
  • Avocado: ripe avocados are creamier and the best for toast (but not too ripe!).
  • Salt & pepper: to taste for extra flavor.

How Much Cottage Cheese to Use Per Toast

Depending on the size of your toast, I recommend anywhere between ¼ cup to ⅓ cup of cottage cheese.

How to Make Cottage Cheese Avocado Toast

Cottage cheese avocado toast couldn’t be any easier to make, so here I’m sharing the two simple steps and useful tips for crunchy toast you’ll enjoy eating:

  1. Prep
Toast pieces of bread large enough to have a firm support for cheese and avocado. If you don’t have a toaster, you can toast the bread in a pan, the oven, or the air fryer.
  2. Load it up
Drain any excess liquid in the cottage cheese tub and spread it over the toasted bread. Add the avocado slices on top and sprinkle salt and pepper.

Preventing Soggy Cottage Cheese Toast

You know that liquid in the cottage cheese tub? Yeah, my toast hates it because it makes it soggy. To avoid this, I tilt my spoon and drain any excess liquid back into the tub as I try to scoop mostly cottage cheese curds, which makes perfect cottage cheese toast.

Is This a Complete Meal?

Yes! A complete meal includes protein (cottage cheese), carbs (toasted bread), fiber, and healthy fat (avocado provides both). While there’s nothing wrong with regular white bread, whole-wheat bread is usually a healthier choice as a source of fiber and will make your cottage cheese avocado toast more nutritious and filling.

Ingredients

  • 2 pieces of toasted bread, your favorite
  • ½ cup cottage cheese
  • ½ avocado, sliced
  • Salt & pepper, to taste

Instructions

Prep:

  • Toast your bread to your liking. You'll want a medium toast to offer some firm support.

Load it up:

  • Place the toasts on your plate and measure out the cottage cheese, trying to drain any excess liquid in the tub. Try to scoop cottage cheese curdles only. Distribute the cottage cheese over your toasted bread.
  • Top your cottage cheese toast with avocado slices. Sprinkle salt and pepper over the top to your liking.
