Protein Banana Bread with Cottage Cheese 

Cottage cheese is having a moment -both on social media and in my fridge. It turns out that it’s a great way to add protein into my day; a little here and a little there adds up, and the runner in me is totally thankful for it. 

I took my tried-and-true Greek yogurt banana bread and modified it to make this cottage cheese banana bread. It tastes great, has a moist texture, and keeps that banana goodness we all crave. It turns out the internet is right about this hype.

Ingredients 

The baking staples you’ll need for this banana bread are ripe bananas to add natural sugar, cottage cheese (curd size doesn’t matter), butter, very little white sugar (brown sugar also works), eggs to bind the ingredients, vanilla extract, all-purpose flour (you can swap it for 1:1 all-purpose gluten-free flour), baking soda to rise the batter and make it airy, and salt.

How Ripe Should Bananas Be for Banana Bread 

The best bananas for banana bread are those with many dark spots or that have turned completely brown. The riper the bananas, the sweeter and moister the bread!

How to Make Cottage Cheese Banana Bread

Check out the easy steps and tips to make this cottage cheese banana bread:

  1. Preheat the oven and grease a loaf pan or line it with parchment paper.
  2. Combine the mashed bananas with the cottage cheese, melted butter, and eggs. Whisk to combine. Add sugar and vanilla, and mix.
  3. Mix the dry ingredients: flour, baking soda, and salt. Add this mix to the batter and then transfer to the loaf pan.
  4. Bake for 45 minutes, then cover the loaf pan with foil to lock in moisture and bake 10 more minutes. This bread is ready when a toothpick inserted in the center comes out clean.
  5. Wait 15 minutes for the cottage cheese banana bread to cool before slicing it and enjoying a slice with a cup of coffee!

Mix-Ins That Work for This Recipe 

Add chopped nuts or blueberries to make this cottage cheese banana bread even more epic, or go for my favorite add-in: chocolate chips! They’re such a classic and pair deliciously well with this bread!

Keeping Banana Bread Moist 

Covering the banana bread with foil during the last 15 minutes of cooking helps retain the bread’s moisture and prevent it from burning as it finishes cooking.

Ingredients

  • 2 large ripe bananas, about 1 ½ cups mashed
  • ¾ cup cottage cheese
  • ¼ cup butter, melted
  • ½ cup white sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

Prep:

  • Preheat the oven to 350F. Grease a loaf pan or line it with parchment paper.

Make the batter:

  • In a large bowl, mash the bananas. Add the cottage cheese, melted butter, and eggs. Whisk to combine. Add the sugar and vanilla and mix.
  • In a smaller bowl, mix the flour, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients’ bowl and mix until just combined. Pour the batter into the prepared loaf pan.

Bake:

  • Bake in the preheated oven for 55 minutes until a toothpick inserted in the center comes out clean. Around minute 45, cover it with tin foil and finish baking.
  • Remove it from the oven and allow it to cool down for 15 minutes before removing it from the pan and slicing.

Notes

This banana bread is one you’ll devour fast! That said, store any leftovers in an airtight container or tightly wrapped in plastic for 3 to 5 days on the countertop or in the fridge.
