Just when you thought you’d seen it all in a taco, you’ve landed on my deliciously crazy and easy ground meat and kale taco recipe.

Healthy Tacos with Kale
As many of you know, taco recipes are a way to my heart, right after coffee, of course, and this Kale Taco recipe makes an appearance on our weekly taco night from time to time.
You might be thinking that there is no way kale in tacos can taste good, but I'd argue that when finely chopped, it wilts down to a texture very similar to spinach, which you can substitute in this recipe if you don't have kale on hand.
I don’t know about you, but anything inside a taco is always a win with my family. Plus, they are suuuuper easy to make. I mean, 10 minutes + 1 skillet? I’m in!

Besides kale, these tacos are filled with more veggies and ground meat, making a balanced meal everyone will rave about. While you'll notice in the video below that I use ground buffalo, you can make these kale tacos with any ground meat you have on hand.

How to Make Kale Tacos
For the most part, these kale tacos come together in about 10 minutes in one pan, making it a breeze to prepare, and the cleanup is minimal. Don't you love that type of recipe? I sure do!
Once you have cooked the ground meat in the pan, add the chopped kale, cover, and simmer until the kale has softened. Scoop the kale and meat mixture into taco shells or tortillas and top with your favorite taco toppings. That’s all!

I love topping my tacos with homemade salsa and pico de gallo. Taco night is not complete without delicious sides too, like this low-carb Mexican cauliflower rice and this fresh and healthy corn and tomato salad. And sipping a Skinny Margarita? Yes, please!

Kale & Ground Meat Tacos

Ingredients
- 1 tablespoon oil
- 1 pound ground meat
- 2 large carrots, grated
- ½ onion, chopped
- 2 garlic cloves, minced
- 1 ½ tablespoons taco seasoning
- 2 tablespoons tomato paste
- ½ cup water
- 1 bunch kale (about 2 cups), stems removed and chopped
- 8 taco shells or tortillas
- Taco toppings
Instructions
Prep:
- On a cutting board, grate and chop the veggies. Remove the stemps from the kale, and chop it into shreds.
Cook:
- Heat a large skillet over medium-high heat. Once hot, add the oil and distribute it around the pan. Add the meat and break it up with a spatula around the pan. Add the carrots, onion, and garlic and toss the veggies with the meat as they cook, for 5 to 7 minutes until the meat begins to brown and the veggies soften.
- Sprinkle the taco seasoning on top, add the tomato paste to the pan, and stir to combine. Add the water and the chopped kale to the pan, cover, and simmer for 3 to 5 minutes until the kale has softened. Stir to combine.
Serve:
- Scoop the kale and meat mixture into taco shells or tortillas and top with your favorite taco toppings.

Ok, as a taco fan, I gotta admit that kale tacos sounded weird… till I tried them! The combination of kale and ground buffalo is epic!
