What to Put on Beef Tacos

There are no rules when it comes to loading up your beef tacos because they pair great with veggies, cheeses, and sauces. It ultimately comes down to the ingredients you have on hand and how much you want to put on them.

Flour tortillas will always hold more filling and toppings than crunchy corn tortillas, and when in doubt, tostadas are more fun to eat!

Veggies

While veggies can be intimidating, they add loads of flavor, color, and hold a guilt-free place at the dinner table, so pile on their favorites!

  • Romaine Lettuce: this leafy green lettuce is crisp and delicious, and tastes great on tacos.
  • Iceberg Lettuce: lighter lettuce that is super crunchy and also a staple on tacos.
  • Coleslaw: coleslaw is a yummy, crisp, and refreshing on top of tacos.
  • Spring Mix: leftover spring mixes are a great way to incorporate veggies into taco meals.
  • Bok Choy: bok choy is a vegetable similar to cabbage that holds so much of the tasty taco flavor you love.
  • Spinach: another highly nutritious vegetable that accentuates flavor of the beef.
  • Black Beans: is it Taco Tuesday without all the beans?
  • Pinto Beans: not only inexpensive, beans are a great way to stretch taco dishes and add sustained protein.
  • Refried Beans: a dollop of refried beans adds delicious texture and necessary protein to beef tacos.
  • Kidney Beans: another great way to add flavor to tacos without breaking the bank.
  • Green Onion: a garnish and vegetable that holds a tasty oniony flavor in tacos.
  • Scallions: crunchy peppery flavor + beef tacos = heaven
  • Shallot: a toned-down onion with a garlic aftertaste is the best way to describe the flavor that this veggie brings to taco night.
  • Cilantro: a classic herb for adding loads of flavor-use fresh or store-bought for maximum flavor.

  • Roasted Sweet Potato Cubes: Sub the potatoes for sweet potatoes (less carbs and the sweetness is unmatched).

  • Yellow Onion: great for caramelizing and pairs great with beef tacos!
  • Cherry Tomatoes: sweet tomatoes go perfectly with beef tacos because of the popable taste.
  • Diced tomatoes: don’t forget this classic topping, tomatoes are meant to be with tacos!
  • Avocado: everything tastes better with avocado, don’t you think?
  • Corn: canned or fresh corn both complement and make beef tacos taste even better.
  • Bell Peppers: red, green, yellow, or orange bell peppers add loads of color to a perfect beef taco.
  • Cauliflower: roast cauliflower to desired crunchy taste & you won’t be disappointed.
  • Matchstick Carrots: these teeny weenie carrots are super crunchy and subtle that they may not even notice them!
  • Parsnips: perfectly roasted parsnips are irresistibly yummy on tacos!
  • Zucchini: yes it’s green, but zucchini is super easy to roast to perfection with your favorite seasonings and top on beef tacos.
  • Green Olives: pair with feta cheese for an authentically Mediterranean experience.
  • Black Olives: muffuletta tacos, anyone?

  • Cucumber: pair with olives, feta, or olive oil for an authentic Mediterranean palate.
  • Asparagus: another great way to incorporate veggies into a delicious dinner.
  • Garlic: powder, minced, or fresh are all great choices to unload maximum flavor.
  • Radishes: this is a thing, as the radishes pair great with the meat and complement each other.
  • Chickpeas: add deep flavor and are super budget-friendly for families!
  • Pickled Onions: these insanely delicious vinegary onions are just the inspiration you have been needing.
  • Pickled Jalapenos: inexpensive but nonetheless mouthwatering.
