Watermelon Popsicles

Fresh Watermelon Popsicle Recipe

With this easy popsicle recipe, you can enjoy juicy watermelon and beat the summer heat. Just like my watermelon pizzas, these pops will put that enormous watermelon you bought to use so it doesn’t go bad in the fridge. This is a fun recipe from my cookbook, The Best Homemade Snacks on the Planet.

Ingredients

Whether you cube the watermelon yourself or buy a container of pre-cut pieces, you'll need about a pound (about 5 cups). Fresh lime juice for a hint of citrus, and sugar or honey is optional to make the pops sweeter.

Choosing the Right Watermelon

Look for a watermelon with dark green skin and a creamy yellow spot on one side. The darker the yellow spot, the sweeter the watermelon. Give it a thump, too. If it sounds hollow, it's a good one.

How to Make Fresh Watermelon Popsicles

  1. Prep the watermelon.
    Wash the outside and cut the watermelon into small cubes. Seedless watermelon is easiest for popsicles, but if you can't find one, just remove the seeds after cutting. A few blended seeds won't be noticed.
  2. Blend.
    Blend the watermelon with the lime juice and taste it before adding sweetener. If it tastes flat, add a little honey or sugar and blend again. The lime juice helps keep the color bright and adds a fresh taste.
  3. Freeze the popsicles.
    Pour the mixture into popsicle molds, leaving about ½ inch at the top for expansion. There’s usually no need for straining. Freeze for about 4 hours, until solid.
  4. Enjoy them.
    Take the popsicle mold out of the freezer, run the sides under some water (as many as you want to take out), and the pops will slide right out.

Ingredients

  • 5 cups watermelon cubes, about 1 pound
  • 2 tablespoons lime juice
  • 2 tablespoons sugar or honey, optional

Instructions

Make the popsicles:

  • Cut the watermelon into cubes and add them to a blender. Add the lime juice and blend until smooth. Taste the mixture and add sugar or honey, if needed. Blend again to mix.
  • Pour the mixture into popsicle molds, leaving about ½ inch at the top. They expand as they freeze. Insert the popsicle sticks and secure them with the lid.

Freeze:

  • Freeze for 4 hours, or until solid. To release, run the outside of the popsicle mold under warm water for a few seconds, then gently pull the popsicles out.

Notes

  • Seedless watermelon is easiest for popsicles, but if you can't find one, removing the seeds after cutting is not too bad. A few blended seeds won't be noticeable.
  • Taste the watermelon mixture before adding sweetener. If the watermelon is sweet, you may not need any sugar or honey.
  • There's usually no need to strain the mixture. Fresh watermelon blends smooth enough for popsicles.
  • Once frozen solid, they’ll last up to 3 months in the freezer -although I recommend enjoying them much sooner. They can stay in the mold, or you can remove them and store them in a freezer bag or airtight container for up to 3 months.
