Leftover Thanksgiving Egg Rolls

Skip the sandwich and turn my turkey into hummus and turkey stuffed egg rolls, aka Baked Thanksgiving Leftover Egg Rolls!

Turn leftover turkey and hummus into these yummy Thanksgiving Egg Rolls. They’re simple to make and baked, not fried making them a healthier version of this favorite recipe.

I’ve found that these crispy baked turkey egg rolls are another favorite way to use up that thanksgiving turkey, joining my leftover turkey chili and my turkey salad recipes that my family has always loved.

Stuffed Turkey Egg Rolls

Roasted turkey and creamy hummus are wrapped in egg roll wrappers, then baked until golden. Each bite has that savory turkey filling with a perfect crispy texture.

Surely, I can't be the only person who looks forward to the "extras" or has gone as far as hiding them in the back of the fridge so her husband doesn't find the extra turkey in the middle of the night.

Now, if you want to make these on a non-holiday, you can use shredded rotisserie chicken or even smoked deli turkey, the taste won’t be quite the same, but anything wrapped in a crispy, hot egg roll wrapper tastes pretty amazing.

Thanksgiving Egg Roll Ingredients

Here’s everything you’ll need to make these tasty Thanksgiving egg rolls. 

  • egg roll wrappers: use the large, 7-inch wrappers. You can find them in the refrigerated and fresh produce section.  
  • hummus: the glue that holds the filling together and adds a deliciously creamy, garlicky flavor. 
  • roasted turkey: 2 cups of shredded or chopped turkey is all you need. 
  • cooking spray: to coat the cookie rack and the wontons. You can also achieve the same results by brushing the egg rolls with oil. 
  • water: to help roll and seal the egg rolls. 

You can also add a small amount of leftover stuffing to the centers for more Thanksgiving flavor but be careful not to overfill them. About a tablespoon per wrapper is plenty.

How to Make Leftover Thanksgiving Turkey Egg Rolls

If you've never made egg rolls in your life, you are not alone. 

Until I tested this recipe, I was intimidated by the whole rolling and folding of the egg roll wrapper, but it’s not complicated, and I share step-by-step instructions on how to make your own Thanksgiving egg rolls at home. 

  1. Prep 
    Preheat the oven to 425F. Place a cooking cooling rack onto a large baking sheet and lightly grease with cooking spray. 
  2. Grab a wrap
    Place the egg roll wrapper onto a cutting board so one of the corners are facing you (it should look like a diamond). 
  3. Assemble
    Spread 1 tablespoon of hummus on the center of the wrapper and top with roasted turkey. 
  4. Fill a small dish with water
    Dip your finger in the dish of water and wet the edges of the wrapper. 
  5. The first fold
    Lift the outer corner and fold one side of the wrapper over the fillings. 
  6. Fold again and roll
    Next, fold the sides over the filling and roll to seal. 
  7. Give a toothpick
    Pierce each roll a few times with a toothpick and brush each with a little oil or coat with cooking spray. 
  8. Bake to perfection 
    Place them onto the cookie sheet and bake for 15 minutes before flipping the eggrolls and baking for an additional 7 minutes or until golden brown and the shells are crisp.

Dipping Sauce for Thanksgiving Egg Rolls

To take these eggrolls to the next level, I pair them with a cranberry-orange sauce. The sweet flavor brings out the savory filling and tastes like that first bite from your Thanksgiving plate all over again. 

You can use either homemade cranberry sauce or canned, whatever finds itself sitting in the fridge the next day. Here’s everything you’ll need to make it: 

  • ½ cup cranberry sauce
  • 2 tablespoons fresh orange juice
  • ½ teaspoon orange zest

Ingredients

  • 10 square egg roll wrappers, 7 inch
  • 1 cup hummus
  • 2 cups chopped roasted turkey
  • Cooking spray, for baking
  • Water
  • ½ cup leftover cranberry sauce
  • 2 tablespoons orange juice
  • ½ teaspoon orange zest

Instructions

  • Preheat the oven to 425F, place a cookie cooling rack onto a baking sheet, and lightly grease with cooking spray (this will allow heat to cook egg rolls on all sides).
  • Fill a small dish with about ½ cup warm water.
  • On a large cutting board place an egg roll wrapper so one of the corners is facing you (like a diamond).
  • Spread about a heaping tablespoon of hummus in the middle of the wrapper, in a vertical line. Top with leftover carved turkey. 
  • Dip your fingers into a water dish and wet the edges of the wrapper.
  • To close, lift the outer corner and fold up and over the filling, tucking the edge slightly under. 
  • Fold the sides over and roll. Because you've moistened those edges with water, that will seal the final corner piece.
  • With a toothpick, pierce each roll a couple of times. Brush each egg roll with a little oil or lightly coat with cooking spray and set it on top of the cookie sheet.  
  • Repeat process with remaining wrappers and ingredients. 
  • Bake for about 15 minutes then flip and continue to bake for an additional 7 minutes until golden and crisp. Remove from the oven.
  • While the egg rolls bake, mix the cranberry sauce with the orange juice and zest to create a dipping sauce.
  • Serve the egg rolls warm with cranberry-orange sauce.
