These bell pepper nachos are everything you want from the classic appetizer but healthier, fun, and super flavorful!

Whether you use ground beef, turkey, or chicken, these super simple bell pepper nachos will satisfy your craving. Let’s get cooking!

Sheet Pan Bell Pepper Nachos

One thing we love in our house is taco night. But what this mom also loves is giving classic meals a healthy twist, as I do in this easy Bell Pepper Nacho Recipe. More veggies, more flavor, same effort: that’s a winning meal for me!

The same way I often serve tacos in lettuce cups for extra fiber or swap regular white rice for cauliflower rice, these nachos add nutrition to a family dinner idea that is super easy to make, and both kids and adults love it!

Healthy Nachos for the Family

While traditional nachos are delish, swapping them for bell pepper slices is a healthier choice that adds more nutrition to your meals without sacrificing flavor. These veggie nachos are tasty, colorful, and just as fun to eat as the classic ones!

Ingredients

This recipe swaps nachos for bell peppers and then you fill top them as you usually do. Before jumping to the complete recipe, check out what I’m using to make this healthy dinner:

  • Bell peppers: more colors make this recipe more fun, but feel free to use any bell peppers you have on hand.
  • Oil: for cooking the meat.
  • Ground beef: my meat of choice to load these nachos. You can use turkey or chicken.
  • Taco seasoning: makes the meat super flavorful.
  • Toppings: salsa, grated cheddar cheese, black olives, guacamole, and sour cream.

How to Cut Bell Peppers into Nachos

To cut your bell peppers into nacho chips, simply slice them in half, remove the core and seeds, and then cut each half into 3 to 4 large pieces that will serve as the base for holding the toppings.

How to Make Bell Pepper Nachos

I love making these later in the week by using leftover ground taco meat and all I have to do is load it up with toppings and I can cut the cooking time in half. Here is what you need to do:

  1. Prep
    Preheat the oven, line a baking sheet, slice the bell pepper into even slices, and place them onto the pan.
  2. Cook the beef
    You can use ground beef leftovers from taco night or cook it from scratch in a pan.
  3. Bake
    Cook the sliced bell pepper in the oven for 5 minutes. Add the ground beef and the toppings and bake for about 5 minutes to heat everything through, until the cheese is melted.
  4. Serve
    Allow them to cool down before serving.

Just like tacos, everything gets tastier and more fun when you add your favorite toppings! Here are some delicious ideas my family loves:

  • fresh salsa
  • pico de gallo
  • guacamole
  • avocado slices
  • cheese
  • black olives
  • jalapeño peppers
  • sour cream

Success Tips

For easy prep and perfectly cooked bell pepper nachos, follow these success tips:

Cut even slices
Cut your bell pepper into pieces of a similar size as a traditional corn chip so they all bake at the same time.

Stack the nachos
Place the bell pepper nacho bases close together on the sheet pan since, as they cook, they will shrink. Plus, you want loads of toppings on each slice.

Save time
Save time by cooking up your meat ahead of time; this is why I love using leftover meat from taco night.

What to Serve with Healthy Bell Pepper Nachos

Let’s add more flavor to this nacho feast! You can serve this delicious corn and black bean salsa or fresh pineapple salsa… or both! This corn and tomato salad is also a fresh and crunchy side everyone likes.

Ingredients

  • 3 large bell peppers, 1 each color, sliced into nacho size pieces
  • 1 tablespoon of oil
  • 1 pound ground beef
  • 1 ½ tablespoons taco seasoning
  • ½ cup salsa
  • 8 ounces grated cheddar cheese
  • 4 ounce can black olives
  • ½ cup guacamole
  • ¼ cup sour cream

Instructions

Prep:

  • Preheat oven to 350 degrees. Place oven rack in the middle position and line a large baking sheet with parchment paper. Place the bell pepper slices onto the pan.

Cook the beef:

  • In a pan over medium heat, heat 1 tablespoon oil. Add in ground beef and taco seasoning, and using a spatula, break up the ground beef as it cooks, until no longer pink, about 8 to 10 minutes.

Bake:

  • Place the bell pepper slices in the oven for about 5 minutes. Remove from the oven onto the counter.
  • Top the bell pepper nachos with meat mixture and salsa. Add the cheese on top, if using, black olives, and any other toppings you want to be heated.
  • Place back into the oven and bake until the cheese is melted about 5 minutes.

Serve:

  • Remove from the oven and allow to cool before serving.
