I’ve said it once, and I’ll say it again. You’re going to LOVE the combination of avocado and shrimp. Perfectly cooked shrimp paired with the creamy texture of avocado is one salad recipe that you’ll never get tired of. Ever.

Make it easy on yourself and buy shrimp that is already peeled and deveined. Nobody has time for that! Heck, save even more time and get pre-cooked shrimp if you wish!

Ingredients

Fresh, easy-to-find ingredients are what you’ll need to make this simple salad recipe, which is why you’ll love it! We all deserve to have a recipe this good with minimal effort! Here is what you’ll need:

  • shrimp: peeled and deveined and tails removed.
  • cherry tomatoes: cut them in half.
  • sweet corn: you can use canned corn or frozen corn.
  • avocados: fresh avocados peeled and cubed.
  • reduced-fat feta cheese crumbles: other types of cheese will work as well.
  • fresh basil: this can be optional but shouldn’t be!

How to Cook Shrimp for Salad

Shrimp is one of the easiest and quickest proteins to cook for salad. You can grill, steam, broil, or pan-fry shrimp in about 5 minutes!

Depending on the size of the shrimp, they usually need about 3 minutes per side to be cooked all the way through – until the meat has turned fully pink.

How to Make Corn Avocado Shrimp Salad

You’re about to see why this corn avocado shrimp salad is always top of mind, especially during the summer months. It’s a fast and easy way to make something that tastes gourmet without the work. Here’s how to make this avocado & shrimp salad:

  1. Cook the shrimp
    Pan-fry, steam, or grill shrimp until they are cooked through, about 3-4 minutes total. Set aside to cool completely.
  2. Combine
    In a large bowl, combine all the salad ingredients.
  3. Add the dressing
    Make the dressing in a small bowl and pour it over the salad. Toss to combine.

Best Dressing for Avocado and Shrimp Salad

There are so many great dressing options for this shrimp salad but one of my favorites is a spin on the classic balsamic vinaigrette with a smoky and citrusy profile that goes perfectly with shrimp. To make the dressing, you simply measure, pour, and combine the ingredients!

What to Serve with Shrimp Avocado Salad

Eating a salad is a delicious meal, but donut forget that you can pair up other easy recipes to enjoy right along with it. Some other sides to serve with this avocado salad with shrimp are air fryer zucchini chips (with no breading), caramelized brussels sprouts with bacon, acorn squash soup, baked Parmesan zucchini, and fried eggs. Yummy!

Ingredients

  • 1 pound shrimp, peeled and deveined, tails removed
  • 1 pint cherry tomatoes, halved, about 2 cups
  • 1 ½ cups corn, thawed if frozen or 1 can drained
  • 2 avocados, peeled and cubed
  • ¼ cup feta cheese crumbles
  • ½ bunch fresh basil, coarsely chopped

Dressing:

  • 1 ½ tablespoons balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 lime, juiced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin

Instructions

  • Pan-fry, steam or grill shrimp until they are cooked through, about 3-4 minutes total. Set aside to cool completely.
  • In a large bowl, combine all the salad ingredients.
  • Make the dressing in a small bowl and pour over salad. Toss to combine.
