Best Avocado Shrimp & Corn Salad

This corn avocado shrimp salad is always top of mind, especially during the summer months. It takes the incredible flavors of my corn and tomato salad, and has 5x the protein thanks to the shrimp. It's a fast and easy way to make something that tastes gourmet without the work, and one salad recipe that you'll never get tired of. Ever.

Ingredients

Make it easy on yourself and buy shrimp already peeled and deveined, or save even more time and get pre-cooked shrimp. Plus, you’ll need cherry tomatoes, canned or frozen sweet corn, avocado, feta cheese crumbles (or any other cheese), and, optionally, fresh basil.

How to Make Corn Avocado Shrimp Salad

  1. Cook the shrimp.
Grill, steam, broil, or pan-fry the shrimp, as I do in the video below. Depending on the size, they usually need about 3 minutes per side to cook through, until the meat is fully pink.
  2. Combine.
Once the shrimp has cooled completely, combine it with all the salad ingredients.
  3. Add the dressing.
Make the dressing in a small bowl and pour it over the salad. Toss to combine.

Best Dressing for Avocado and Shrimp Salad

My favorite is a spin on the classic balsamic vinaigrette with a smoky and citrusy profile. Other fun dressings are this Thai peanut dressing, maple Dijon vinaigrette, this citrus vinaigrette, and my homemade Ranch dressing. Mix and match the dressings to change up the flavor of this salad every time that you make it!

Laura’s Favorites Sides for This Salad

Some other sides to serve with this avocado salad with shrimp are air fryer zucchini chips (with no breading), caramelized Brussels sprouts, acorn squash soup, baked Parmesan zucchini, and fried eggs.
