Easy Quesadillas with Rotisserie Chicken
As much as I love roasting a whole chicken at home, this busy mom juggles work, kids, and family, so grabbing a rotisserie chicken from the store has become my #1 hack for making easy dinners quickly. My kids love quesadillas, so making rotisserie chicken quesadillas was a no-brainer!
This recipe and my Buffalo chicken quesadillas are my top picks when I need dinner on the table in 15 minutes and still want to serve a homemade meal that kids and adults devour. Bonus: leftovers make great school lunches. Woohoo!

These quesadillas are a great way to repurpose leftover flour tortillas from taco night. You add shredded cheese, chopped rotisserie chicken, and taco seasoning, and you get a delicious meal packed with nutrition and flavor that is also fun to eat!
Best Cheese for Quesadillas
While you can use any cheese, the best for quesadillas are those that melt well, like Cheddar, Monterrey Jack, and Mexican blend. Oaxaca cheese is another great option!
How to Make Rotisserie Chicken Quesadillas
Making delicious rotisserie chicken quesadillas at home is as easy as making a grilled cheese! Follow these steps and tips and you’ll enjoy an epic dinner:
- Prep
The smaller you chop the chicken, the quicker it will warm up. Once done, spray one side of each tortilla with cooking spray. You'll add the filling to the non-greased side. - Assemble
Add layers on half of each tortilla: shredded cheese, taco seasoning, chicken, and cheese. You want cheese on both sides to help seal the quesadilla. Fold the tortilla over to form a half-moon. - Cook
On a hot skillet, cook the quesadillas, flipping them over after 3 minutes to cook the other side. They are ready when the cheese is melted and the chicken is warm. Slice each quesadilla into 3 pieces, serve with your favorite toppings, and enjoy!

Keeping Quesadillas From Falling Apart
The trick to keep quesadillas from falling apart is adding a layer of shredded cheese next to both sides of the tortilla. When the cheese melts, it acts like glue and helps the ingredients hold together.

What to Serve with Rotisserie Chicken Quesadillas
These quesadillas taste amazing with guacamole, sour cream, or salsa on top. I also love adding a nutritious side, like an easy side salad, corn and black bean salsa, or Mexican cauliflower rice.
Simple Rotisserie Chicken Quesadillas

Ingredients
- 4 large flour tortillas
- 1 cup shredded cheese, Mexican blend or Cheddar
- 1 ½ teaspoons taco seasoning
- 2 cups rotisserie chicken meat, cubed
- Toppings: guacamole, sour cream, salsa, optional
Instructions
Prep:
- Chop the rotisserie chicken into small pieces. The smaller the chicken, the more evenly and quickly it will warm up.
- Lay the tortillas flat on a cutting board. Spray the top of each tortilla with cooking spray and flip over.
- Distribute about 2 tablespoons of shredded cheese on half of each tortilla. Sprinkle a little less than ½ a teaspoon of taco seasoning over the cheese and then top with ½ cup of chopped, cooked rotisserie chicken. On top of the chicken, sprinkle another 2 tablespoons of shredded cheese. Having the cheese on both sides will help seal the quesadilla.
- Fold the tortilla over to form a half-moon. The greased sides should be facing out.
Cook:
- Heat a large skillet over medium-high heat. Once hot, place one or two quesadillas on the hot surface. Cook for 3 minutes on the first side; use a spatula to flatten out the quesadilla, and flip over. Cook for an additional 2 minutes on the other side until the cheese is melted and the chicken has warmed up.
Serve:
- Remove the quesadillas from the pan and slice each quesadilla into 3 pieces. Serve with sour cream, guacamole, and salsa if you want.
