Whenever I need a quick snack or a simple appetizer that will please a crowd, I make these delicious Bacon, Lettuce, and Tomato Hummus bites!

These delicious hummus bites with tomato, lettuce, and bacon will make everyone drool. And they couldn’t be easier to make. Win-win!

Hummus Bites with Tomato and Lettuce

Whenever I need a quick snack or a simple appetizer that will please a crowd, I often search my fridge for one of my go-to ingredients: hummus.

Having hummus handy guarantees that I can make a snack, school lunch, an appetizer, or even dinner on demand. That’s why I’m so excited to share with you this fresh spin on one of my favorite sandwiches: the BLT.

Who can resist taking a bite of crispy, salty bacon along with a deliciously sweet juicy tomato? Not this girl. And, since I’ve been eating mostly grain-free for two years now, you can pretty much assume that I’ve gotten very creative with many of my recipes and adapted them for me to enjoy.

Ingredients

You can make a delicious appetizer with four simple ingredients and see your guests asking for the recipe! Here’s what you need for these hummus bites:

  • Romaine lettuce leaves: the inner leaves are firmer to hold the hummus. You can also use endive leaves if you have them around.
  • Hummus: your favorite variety.
  • Roma tomatoes: my pick for this appetizer, but other tomatoes also work.
  • Bacon: delish! Add it cooked and crumbled.

This recipe is a great way to use up any leftover bacon from breakfast. Wait a minute; that never happens at my house. But if it did, I’m sure I’d use it up in these cups instead of cooking up a slice or two while assembling these.

How to Make Hummus Bites

These hummus bites are a breeze to make! Grab the ingredients and check out how easily this appetizer comes together:

  1. Prep
    Wash and dry the lettuce leaves before placing them on a platter. Cook the bacon and chop it into pieces. Chop the tomatoes.
  2. Assemble
    First, add hummus and then top it with chopped tomatoes and bacon. That’s all! Time to enjoy!

Ingredients

  • 8 Romaine lettuce leaves
  • ½ cup hummus, any variety
  • 2 Roma tomatoes, diced
  • 2 strips bacon, cooked and crumbled

Instructions

Prep:

  • Separate, wash, and dry the lettuce leaves. Place them on a platter.
  • Cook the bacon in the microwave or preferred method until crispy. Finely chop it into pieces.

Assemble:

  • Spoon a heaping tablespoon of hummus in the middle of the leaf and spread.
  • Top with finely chopped tomatoes and crumbled bacon.

    These look yummy!
    We lived in the Middle East, so our family LOVES hummus. Our favorite way to eat hummus is with fresh, hot flat bread from our local bakery in Amman, Jordan. 🙂 Here in the States, we settle for tortilla chips or pita bread from the grocery store. 😉
    Looking forward to making these for quick, healthy lunches this summer!
