Let’s celebrate National Hummus Day together with these delicious Bacon, Lettuce, and Tomato Hummus cups!

BLT Hummus Cups #NationalHummusDay

Whenever I need a quick snack or a simple appetizer that will please a crowd, I often search my fridge for one of my go-to ingredients: hummus.

Having a tub of Sabra Hummus (or two) handy guarantees that I can make a snack, school lunch, an appetizer, or even dinner on demand. That’s why I’m so excited to have partnered with Sabra to bring you this fresh spin on one of my favorite sandwiches: the BLT.

Who can resist taking a bite of crispy, salty bacon along with a deliciously sweet juicy tomato? Not this girl. And, since I’ve been eating mostly grain-free for two years now, you can pretty much assume that I’ve gotten very creative with many of my recipes and adapted them for me to enjoy.

Some of my favorite recipes in this blog are made with hummus; they include Warm Hummus and Spinach Dip, Zesty Avocado Rolls, Humus Baked Chicken, Crunchy Veggie Rolls, Hummus Stuffed Avocado, Hummus Veggie Club Sandwich, 7 Layer Greek Hummus Dip, Hummus Tostadas, and Buffalo Chicken Hummus Dip.

Back to these yummy BLT cups. I am using an endive leaf to hold the hummus, tomato, and crispy bacon pieces. If you can’t find endive (in the family of lettuce) use the inner leaves of romaine hearts. Either will work great.

On the plus side, this is a great way to use up any leftover bacon from breakfast. Wait a minute; that never happens at my house. But if it did, I’m sure I’d use it up in these cups instead of cooking up a slice or two while assembling these.

Bacon, Lettuce, and Tomato Hummus Cups

Servings: 4
Prep Time 5 minutes mins
Total Time 5 minutes mins

Ingredients

  • 8 Romaine lettuce leaves
  • ½ cup hummus, any variety
  • 2 Roma tomatoes, diced
  • 2 strips bacon, cooked and crumbled

Instructions
 

  • Separate, wash, and dry the lettuce leaves. Place them on a platter.
  • Cook the bacon in the microwave or preferred method until crispy. Finely chop it into pieces.
  • Spoon a heaping tablespoon of hummus in the middle of the leaf and spread.
  • Top with finely chopped tomatoes and crumbled bacon.

    These look yummy!
    We lived in the Middle East, so our family LOVES hummus. Our favorite way to eat hummus is with fresh, hot flat bread from our local bakery in Amman, Jordan. 🙂 Here in the States, we settle for tortilla chips or pita bread from the grocery store. 😉
    Looking forward to making these for quick, healthy lunches this summer!
