Zesty Avocado Rolls

These avocado rolls are easy to make and beyond delicious. Being fish free, they make the perfect lunch!

I love lunch. While most people dread lunch packing or mope about having “leftovers” again, I am thrilled at the opportunity to create delicious lunches every day. These easy avocado rolls will get you loving lunch too.

Fact: I pack 5 lunches every day. My husband takes man-meals to work in a bigger than normal cooler. He gets breakfast, lunch, and a few snacks that include fresh fruit, a yogurt, and anything else I am usually trying to get rid of. It might seem like a lot of food, but the man is gone for nearly 12 hours. He needs food! Good food. 

My kids are super picky. My daughter is eating more and more items each day but progress is slow. My middle child would be happy with a cheese sandwich and a yogurt or any of my homemade breads. Thank goodness he loves my breads. They allow me to get super creative and throw a lot of nutrition-packed ingredients without him noticing too much.

Baby G is a piggy. He will eat anything. He’s definitely a lover of all things protein. Since his teeth came out all he wants to do is chew, except when he takes a spoon and eats hummus right out of the bowl.

Although his school provides breakfast, lunch and a snack; I still pack all his food daily. One look at the food calendar and I knew I was in it for the long haul. So, I got a note from his doctor saying that his food needed to be home made and he opted out of their meals.

After packing so much food every day, I’m usually exhausted. Good thing I have a plan for the week and a fridge full of fresh ingredients to make yummy office lunches for myself, including this delicious zesty avocado wrap.

Ingredients

One bite of these zesty avocado rolls and you’ll be hooked! But what makes them so epic? Check out the simple ingredient list with possible swaps:

  • Whole grain tortillas: or any tortillas you have around.
  • Salsa: I’m using roasted garlic salsa for extra flavor, but any salsa goes great.
  • Whipped cream cheese: mixed with salsa, works as a glue for the filling.
  • Avocado: creamy, nutritious, tasty… what not to love about it?
  • Red bell pepper strips: for added crunch and color!

How to Make Zesty Avocado Rolls

This easy recipe comes together super fast and it’s about to become a new portable lunch favorite! Check out the tips to make perfect zesty avocado rolls:

  1. Prep the filling
    Combine salsa with whipped cream in a bowl, cut bell peppers into strips and dice the avocado.
  2. Assemble
    Spread the salsa mixture over the tortilla. This will help to hold the avocado and bell pepper strips you add next.
  3. Roll!
    Roll the tortilla, cut it in half, and then cut each half into smaller pieces. Use a sharp knife to keep the filling from spreading.

Tortilla Roll-Ups with Avocado & Cream Salsa

These avocado rolls are easy to make and beyond delicious. Being fish free, they make the perfect lunch!

Ingredients

  • 4 whole grain tortillas
  • 1 avocado, sliced and diced
  • ½ red bell pepper, julienned (in strips)
  • ⅓ cup roasted garlic salsa, or any salsa
  • ⅓ cup whipped cream cheese

Instructions

  • In a medium bowl, mix salsa and whipped cream cheese until evenly combined.
  • Lay whole grain tortillas on a flat surface.
  • Spread salsa mixture onto tortillas.
  • Distribute about ¼ of a diced avocado evenly on each tortilla. Lay a few julienned pepper strips along the middle of each tortilla.
  • Roll tortilla from one end to the other. With a sharp knife, cut the “roll” in half, and then each half in 1” pieces.
  • Serve with additional salsa for dipping.

      I did not. I cut the rolls prior to packing them in the lunchbox not the night before.

    Can you please help me with what to make my husband to take to work for his lunch? He’s in the US Air Force and only has a small amount of time to eat lunch so, he takes sandwiches every single day! I don’t know how he can eat the same thing every day but, he does. I need help with some ideas. 🙂

      I can relate. For a while, my husband used to take the same things to work every day. I don’t know how he did it since I simply love lunch and variety. To be sincere, I make lunches from MOMables lunch menus. I know it says for kids but many can be made in a bigger portion or sent along with a salad or smoothie. That is what I eat for lunch.
