Baked Parmesan Fries with Garlic
Perfectly cut, delicious French fries. Mmm.. I can taste them now. Unfortunately, those fries aren't so great for you, so I decided to create my own healthier version: instead of frying my fries in unhealthy oils, I baked these Parmesan Fries in the oven with olive oil.
I thought of these truck fries from Austin, and imagined how we'd make them here in NOLA; they would certainly include some zesty flavor. In New Orleans, it's a fact that we enjoy good food, and we like our food well seasoned so I felt it was necessary to use some garlic, parsley, and freshly grated Parmesan. I have to admit, the result was unbelievable!
My kids fully approved this reicpe, as my Carrot Fries, and that is always a good sign. Serve these for guests instead of the boring baked potato, and you are bound to impress their tastebuds!

Ingredients
Toss potatoes with flavorful seasonings and you’re going to lick your lips after each bite! The simple ingredient’s list includes:
- Russet potatoes: a.k.a. Idaho potatoes, washed and cut into strips. You can also use frozen fries from the store.
- Garlic: garlic cloves grated or garlic powder.
- Olive oil: adds flavor and helps the other ingredients stick to the fries.
- Parmesan cheese: we want cheesy fries, right?
- Parsley: finely chopped for extra flavor.
- Salt: for seasoning.

How to Make Garlic Parmesan Fries
Roast potatoes in the oven instead of frying and you’ll get a much healthier side that goes great with everything! See how easily these Parmesan Fries come together:
- Prep the oven
Preheat the oven to 425F and line a baking sheet with parchment paper. - Prep the potatoes
Wash, peel (optional), and cut the potatoes into ¼-inch strips. Toss them in a clean kitchen towel to dry them well and transfer them inside a large mixing bowl. - Season
Drizzle the potatoes with olive oil, add the garlic, and ¼ teaspoon salt. Toss until the fries are evenly coated. Transfer the fries onto the lined baking sheet and spread them apart. Save the bowl with the oil. - Bake
Bake for 30 minutes, flipping the fries over halfway through. - Make it cheesy
Remove the fries from the oven and with tongs, return them to the olive oil greased bowl. Sprinkle the fries with parmesan cheese and parsley, toss to coat, and transfer them back onto the baking sheet. - Melt it
Place the fries back in the oven and continue baking for 7 to 10 minutes, until the cheese is melted and the tops are golden. - Serve and enjoy!
Remove them from the oven, sprinkle ¼ teaspoon salt over the fries, and serve with your favorite condiments.

Tips for Crispy Baked Fries
With this recipe, you will get all of the crispiness you love from classic fries, but healthier! Follow these tips to bake them perfectly in the oven:
Use Russet Potatoes
Of course, you can turn any potato into Parmesan fries. That said, Russet potatoes yield a perfect texture when they are baked.
Pat dry
After washing the potatoes, pat them dry well so they don’t release steam in the oven, putting our desired crispiness at risk!
Use oil
Since we are only using oil to coat the potatoes, don’t omit it! Oil helps Parmesan fries to turn out golden, crispy, and flavorful. The result will still be much healthier than frying the fries.
Spread them evenly
When placing the fries on the baking sheet, make sure to distribute them evenly, so they all cook at the same time. Try not to overcrowd the pan: this will create steam and goodbye crunchiness!
Flip them
While you’re cooking the Parmesan fries in the oven, remember to flip them over halfway through so they cook evenly.
Can You Use Frozen Fries?
Need to save some time? Want to use up those frozen fries waiting in the bottom of your freezer? No problem! Bake the frozen fries from the store with Parmesan and garlic for the most convenient side.

How to Store Leftover Fries
I don’t think you’ll have leftovers, but if by any chance that happens, allow them to cool down at room temperature (never longer than 2 hours) to avoid steam and store in an airtight container for up to 3 days in the fridge.
If you want to freeze leftover fries, place them flat on a baking sheet and freeze them. Transfer them to a zip bag or airtight container, and keep them frozen for up to 3 months.
When you want to enjoy them, reheat the Parmesan fries in the oven at 400F or with a skillet on the stove (with a little butter or oil) until heated through. You can also reheat them on the air fryer at 400F. Never reheat fries in the microwave unless you want them soggy!
What to Serve with Parmesan Fries
These fries could go well with almost any dinner. I serve them with Baked Garlic Chicken Thighs, Salmon Nuggets, or Turkey Burgers with vegetables for a well-balanced meal. Another mouthwatering way to eat Parmesan fries is as a topping for epic chili cheese fries!

There is a food truck like this in New Orleans. It is called the Fry Bar. They fry whole halves of garlic and rosemary in with the fries and toss them is fresh parm. They are amazing (not too healthy but sooo worth it). They have other combos as well.
