I scream, you scream, and by the end of this post, we’re all going to scream for one of these peppermint ice cream sandwiches! If you love the combination of mint and chocolate, this dessert was designed for you.
Rich chocolate brownies and delicious ice cream all in one bite- let’s make it happen.

Holiday Ice Cream Sandwiches
Just from the picture, you can tell this is the ideal holiday treat! The peppermint ice cream is super refreshing between 2 slabs of fudgy brownie, and I can’t think of a better way to celebrate.
You can thank my daughter for this recipe, she loves my classic Almond Cookie Ice Cream Sandwich, and with her love for mint and chocolate- this idea was born!
It does require a bit of layering and love, but every bite is worth every minute!

What You Need
The only items you need are your favorite carton of peppermint ice cream and a batch of brownies like my homemade recipe from the recipe card or a boxed mix. Either way- the finished and frozen treat is going to be a keeper.
How to Make Brownie Peppermint Ice Cream Sandwiches
There is an order to assemble this treat, so the sandwiches turn out perfect!
Below, you’ll find a brief summary with a visual aid (video), but the entire recipe is located in the recipe card at the end of this post.
- Prep
Preheat the oven to 350F and line 2 9 x 9-inch baking dishes with parchment paper. - Divide the batter
Prepare the brownie batter and evenly divide it between the baking dishes. Allow to cool completely. - Soften the ice cream
While the brownies cool, remove the ice cream from the freezer and let it soften. - Grab a knife
Remove one brownie onto a flat surface and slice each in half. Cut each half into five vertical strips and remove the crispy edges. - Spread the ice cream
Use a serrated knife to cut the entire carton of ice cream in half. Remove the carton and set the ice cream onto the brownies in the baking dish. Use a spatula to spread it across the surface. - Top and freeze
Top the ice cream layer with the brownie pieces, cover with plastic wrap, and freeze until solid. - Enjoy
Once the brownie sandwich is set, lift them out of the pan and onto a cutting board, and slice it into individual servings. The rest is history!
More Festive Dessert Ideas
Treat ideas like this one are exactly what you want to get everyone in the holiday mood. If you love peppermint flavor, you’ll also love this Peppermint Milkshake, especially if you live in a climate with not-so-cold weather in the winter.

A classic option would be this gorgeous Gingerbread Cake! It’s rich in spice with a soft, crumbly texture we can’t get enough of.
For brownies lovers, you can go for these Red Velvet Brownies with frosting or the Pumpkin Swirl Brownies; both are a mega hit and sure to become yearly traditions.

- Prep Time: 5 minutes
- Freezer: 4 hours
- Cook Time: 25 minutes
- Total Time: 4 hours 30 minutes
- Yield: 10
- Category: Dessert
Ingredients
- 1 brownie recipe
- ½ gallon peppermint ice cream of choice
Instructions
- Preheat the oven according to the brownie recipe directions. Line two 9 x 9-inch baking dishes with parchment paper.
- Prepare the brownie batter and evenly divide it between the two pans. Bake for 12 to 14 minutes or until a toothpick comes out clean. Remove the brownies from the oven and allow them to cool down completely.
- While the brownies cool, remove the ice cream from the freezer and allow it to soften at room temperature.
- Remove one brownie square from the pan and set it onto a flat surface. Use a knife to remove the crispy edges.
- Slice both squares in half lengthwise to create 2 rectangles. Slice each rectangle into 5 vertical strips. *Watching the video makes this step clear.
- Remove the lid from the carton of ice cream and use a serrated knife to cut the entire carton in half lengthwise.
- Place both halves onto the brownies in the baking dish and remove the carton- the ice cream should be soft enough that it easily separates from the container but isn’t dripping.
- Spread the ice cream over the brownies with a spatula and top it with the other section of slice brownies (this will create ten sandwiches total).
- Cover the baking dish with plastic wrap and freeze for 4 hours.
- Once frozen, remove the brownie ice cream sandwich from the freezer and trim the excess ice cream edges. Cut into 10 individual sandwiches and serve.
- Wrap the leftovers with parchment paper and freezer in a large zip bag.

We love making milkshakes and warm brownies or Apple crisp a la mode. But we love ice cream straight out of the carton too! What’s not to love about ice cream!

One of our traditions for Thanksgiving is to make a dessert called Pumpkin Freeze. It’s a gingersnap crust on the bottom, and then vanilla ice cream mixed with canned pumpkin, and all the spices you use in pumpkin pie. It’s so yummy!

It’s Ice Cream!!!! Anyway, anytime….. (even right out of the carton if the kids aren’t around!!) with fresh berries or crumbled cookies on top, a homemade banana split, a scoop on top of a trifle made with pound cake, strawberries, bananas and vanilla pudding, or just on a piece of warm pound cake, with fried or baked apples, I could on for 365 days!!!!!

I love to make an ice cream treat with a local shop here in NE Ohio. I purchase their homemade vanilla ice cream, hot fudge and cashews and layer it together with chocolate cookies, then freeze it. We then serve it as an ice cream pie or cake. YUM.

Our favorite way to eat ice cream is to either just serve it up like it is or make a milkshake.
Kristina
We love using ice cream to make ice cream cakes. No half-eaten cupcakes at our parties! It is so simple and delicious, and gets so many comments. If only they realized how easy it is….

I like ice cream over warm brownies! With sprinkles of course!

As a New Orleans girl I use ice cream to make Baked Alaska from time to time and about once a year I try my hand at some sort of ice cream cake. Last year I made an easy ice cream cake stacking ice cream sandwiches and using cool whip as frosting.

I have a great dessert recipe where you layer ice cream sandwiches with whipped topping and caramel ot chocolate sauce. So yummy!

I’ve used ice cream to make ice cream cakes. The kids usually pick their favorite cookie or brownies, hot fudge and their 2 favorite flavors of ice cream. A great treat for summer birthdays.

Milkshake is our favorite. I also like to add icecream on top of any desserts with syrup. Or just cook apple pieces and while it is warm put icecream on top :))

We use French vanilla ice cream to make Snicker’s pie. We also use vanilla ice cream to make our own version of Dairy Queen’s Peanut Buster Parfait!
