Peppermint Ice Cream Sandwiches

I scream, you scream, and by the end of this post, we’re all going to scream for one of these peppermint ice cream sandwiches! If you love the combination of mint and chocolate, this dessert was designed for you.

Rich chocolate brownies and delicious ice cream all in one bite- let’s make it happen.

Holiday Ice Cream Sandwiches

Just from the picture, you can tell this is the ideal holiday treat! The peppermint ice cream is super refreshing between 2 slabs of fudgy brownie, and I can’t think of a better way to celebrate. 

You can thank my daughter for this recipe, she loves my classic Almond Cookie Ice Cream Sandwich, and with her love for mint and chocolate- this idea was born!

It does require a bit of layering and love, but every bite is worth every minute!

What You Need

The only items you need are your favorite carton of peppermint ice cream and a batch of brownies like my homemade recipe from the recipe card or a boxed mix. Either way- the finished and frozen treat is going to be a keeper. 

How to Make Brownie Peppermint Ice Cream Sandwiches

There is an order to assemble this treat, so the sandwiches turn out perfect! 

Below, you’ll find a brief summary with a visual aid (video), but the entire recipe is located in the recipe card at the end of this post. 

  1. Prep
    Preheat the oven to 350F and line 2 9 x 9-inch baking dishes with parchment paper. 
  2. Divide the batter
    Prepare the brownie batter and evenly divide it between the baking dishes. Allow to cool completely. 
  3. Soften the ice cream
    While the brownies cool, remove the ice cream from the freezer and let it soften. 
  4. Grab a knife
    Remove one brownie onto a flat surface and slice each in half. Cut each half into five vertical strips and remove the crispy edges. 
  5. Spread the ice cream
    Use a serrated knife to cut the entire carton of ice cream in half. Remove the carton and set the ice cream onto the brownies in the baking dish. Use a spatula to spread it across the surface.  
  6. Top and freeze
    Top the ice cream layer with the brownie pieces, cover with plastic wrap, and freeze until solid. 
  7. Enjoy 
    Once the brownie sandwich is set, lift them out of the pan and onto a cutting board, and slice it into individual servings. The rest is history!

If you love mint and chocolate, these peppermint ice cream sandwiches were created just for you! Fudgy brownies layered with ice cream- it’s legendary.

Ingredients

  • 1 brownie recipe
  • ½ gallon peppermint ice cream of choice

 

Instructions

  1. Preheat the oven according to the brownie recipe directions. Line two 9 x 9-inch baking dishes with parchment paper. 
  2. Prepare the brownie batter and evenly divide it between the two pans. Bake for 12 to 14 minutes or until a toothpick comes out clean. Remove the brownies from the oven and allow them to cool down completely. 
  3. While the brownies cool, remove the ice cream from the freezer and allow it to soften at room temperature. 
  4. Remove one brownie square from the pan and set it onto a flat surface. Use a knife to remove the crispy edges. 
  5. Slice both squares in half lengthwise to create 2 rectangles. Slice each rectangle into 5 vertical strips. *Watching the video makes this step clear. 
  6. Remove the lid from the carton of ice cream and use a serrated knife to cut the entire carton in half lengthwise. 
  7. Place both halves onto the brownies in the baking dish and remove the carton- the ice cream should be soft enough that it easily separates from the container but isn’t dripping. 
  8. Spread the ice cream over the brownies with a spatula and top it with the other section of slice brownies (this will create ten sandwiches total). 
  9. Cover the baking dish with plastic wrap and freeze for 4 hours. 
  10. Once frozen, remove the brownie ice cream sandwich from the freezer and trim the excess ice cream edges. Cut into 10 individual sandwiches and serve. 
  11. Wrap the leftovers with parchment paper and freezer in a large zip bag.

    They use natural color and flavors in this ice cream, then go and ruin it by adding 3 artificial petroleum-derived colors, as well as carrageenan, which is a natural thickener which happens to have inflammatory properties. 🙁

    But my sister and her kids don’t mind all that crap, so hopefully I can win some ice cream for them! We just eat ice cream straight up in this house! Although my sister has made us some safe ice cream sandwiches using GF chocolate chip cookies. 🙂

    I have a spiced pork chop with apple & cranberry chutney recipe that I love using the leftover chutney to mix with vanilla ice cream! I also really enjoy making mint chocolate shakes!

    My husband makes a Brazilian dessert called cartola. It involves melting butter on a stovetop, adding bananas, then a slice (or 2) of a salty cheese. We sometimes use pepper jack for an extra kick. Once the bananas are caramelized he adds cinnamon on top and serves it up warm with a scoop (or 2) of vanilla bean ice cream. It’s got that sweet/salty combo that I love! He’s tried it on the grill too with foil. So yummy and easy!
