Blueberry Lemon Overnight Oatmeal
After seeing my family devour my lemon blueberry pancakes, it was time to add these flavors to another morning favorite: overnight oatmeal!
These overnight oats with lemon and blueberry are as good as my pancakes and my famous blueberry bread, but with the convenience of making them in 5 minutes with no cooking required.
Making Them High Protein
Overnight oats are incredibly easy to customize with something extra to make them richer in protein and even more filling. My go-to way to boost protein is to add chia seeds, Greek yogurt, cottage cheese, or protein powder.
How to Make Lemon Blueberry Overnight Oats
- Combine oats, milk, chia seeds (if using), and lemon zest in jars. Stir to combine, and add the blueberries (fresh or frozen) on top.
- Refrigerate for at least 4 hours or overnight.
- Serve this breakfast cold or warm it in the microwave. Add your favorite oatmeal toppings and enjoy!
How Long Will Overnight Oats Last in the Fridge
I recommend enjoying overnight oats with blueberries within 2 days. Longer than that, they may not be spoiled, but the berries will start to get mushy and change their flavor.

Lemon Blueberry Overnight Oats

Ingredients
- 1 cup old-fashioned oats
- 1 ½ cups milk, any
- ½ lemon, zested
- 2 teaspoons chia seeds, optional
- 1 cup blueberries, fresh or frozen
Instructions
Fill the jars:
- Fill each jar with ½ cup of old-fashioned oats, ¾ cup of milk, 1 teaspoon of chia seeds, and lemon zest. Stir to combine. Top each jar with ½ cup blueberries and a little more lemon zest if your heart desires.
Refrigerate:
- Cover the jars with a lid and refrigerate for 4 hours or overnight.
Serve:
- Warm up for 30 seconds in the microwave, or enjoy cold. When I'm feeling extra, I love to sprinkle some coconut flakes.
