New Orleans Food Truck Fries

Do any of you daydream of fresh, hot French fries? On my trip to Austin, Texas, I indulged in the best fries from a food truck, and I have been dreaming of them ever since.

Perfectly cut, delicious French fries. Mmm.. I can taste them now. Unfortunately, those fries aren’t so great for you, so I decided to create my own healthier version in my oven. A version, my picky eaters would love. What’s not to love about french fries?

In New Orleans, it’s a fact that we enjoy good food, and we like our food well seasoned. I thought of these truck fries from Austin, and imagined how we’d make them here in NOLA; they would certainly include some zesty flavor.

Instead of frying my fries in unhealthy oils, I baked mine in the oven with olive oil. I felt it was necessary to use some creole seasoning, parsley and freshly grated Parmesan. I have to admit, the result was unbelievable!

Serve With: Healthy Turkey Burgers

These fries could go well with almost any dinner. I served them with baked chicken and vegetables, for a well-balanced meal. Although, I might add, that my favorite way to eat french fries is with over easy eggs.

My kids fully approved, and that is always a good sign. Serve these for guests instead of the boring baked potato, and you are bound to impress their tastebuds – New Orleans style.

Oven baked and delicious.

Ingredients

  • 4 russet potatoes, washed and cut into even strips (peeling is optional)
  • ¼ cup finely chopped parsley
  • ⅓ cup freshly grated parmesan cheese
  • 2 Tablespoons oil
  • 2 teaspoons creole seasoning (I used Zatarain’s Big & Zesty)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Wash, peel and cut the potatoes into strips. Soak in water and dry well.
  3. On a parchment paper lined baking sheet, toss the potatoes, creole seasoning and oil. Using your hands, toss well until everything is evenly coated.
  4. Bake for 20 minutes, checking after 10 minutes to flip for even browning.
  5. Remove from oven and coat potatoes with fresh Parmesan and parsley.
  6. Serve hot with a little mayo and ketchup.

    These look so good and I have heard about the olive oil at high temperature debate so it was good to read your take on it as well. I think every thing in moderation is good, right? However I am not sure I could eat these in moderation after I made them because they look amazing. What a nice blog you have—thanks for sharing!

      I only use olive oil when I roast vegetables in the oven. Because really, there is no better flavor!

    There is a food truck like this in New Orleans. It is called the Fry Bar. They fry whole halves of garlic and rosemary in with the fries and toss them is fresh parm. They are amazing (not too healthy but sooo worth it). They have other combos as well.

      Amanda, there was no “food truck”… the post says… If we had a food truck in New Orleans… I am sure they would be like this…. Austin has AWESOME food trucks!! These are for you to make at home! 🙂 Enjoy!

      Jaimee, maybe 10 minutes? I usually soak while I put a few things away, line the pan…etc.

    Looks great! Except one should never, ever use olive oil to bake with if they’re trying to make a recipe healthier. It’s a great cold oil, smoothies or salads. But it is oxidized at any temp over 150 degrees. A better choice would be butter, lard, coconut or palm oil. Bruce Fife’s book, Eat Fat, Look Thin has a lot of good info on this, as well as Weston A Price’s site. 🙂

      I typically don’t use olive oil at high temperature; however, in the rare occasion we eat these baked fries, olive oil flavor is second to none. I think I will take my chances the few times a year I make these.
