This practical Spiralized Zucchini Recipe comes together quickly, literally in a matter of minutes. Spiralizing veggies is a great way to change up their shape and texture and they cook super fast!

Let's face it; from time to time we all need to change things up a bit when it comes to our veggies, right? One can only eat steamed broccoli or grilled zucchini in so many ways before it starts to get old.

This is one of those family-favorite meals that absolutely bust the myth that kids don't like healthy foods. These recipes are so fun because they prove that kids can enjoy vegetables when prepared correctly!   • Olive oil: for cooking.
  • Garlic cloves: a favorite for adding delicious flavor and aroma!
  • Cherry tomatoes: juicy, colorful, nutritious… how can you not add them?
  • Italian seasoning: tons of flavors!
  • Red crushed pepper flakes: just a pinch for a note of heat.
  • Salt: for seasoning.
  • Zucchini: the MVP of this healthy recipe!

How to Cook Spiralized Zucchini

  1. Sauté garlic
    Sauteing garlic with oil is a delicious way to start this dish.
  2. Cook
    Add tomatoes, Italian seasoning, red pepper flakes, and salt. You’ll cook for 3 to 5 minutes until the tomatoes begin to soften. Then, add spiralized zucchini and simmer for a few minutes.
  3. Enjoy!
    Serve this dish with toppings or your favorite protein.

Ingredients

  • 1 tablespoon olive oil
  • 2-3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1 teaspoon Italian Seasoning
  • Pinch red crushed pepper flakes
  • ¼ teaspoon salt
  • 3 large zucchini, spiralized

Instructions

  • In a large skillet over medium-high heat, heat up oil. Add the minced garlic and toast for about 30 seconds.
  • Add in tomatoes, Italian seasoning, red pepper flakes, and salt. Stir and cook, until cherry tomatoes begin to soften, about 3 to 5 minutes, stirring often.
  • Reduce heat to medium-low; mix in spiralized zucchini, toss to combine, and cover. Simmer covered for 3 minutes, or until desired doneness of zucchini.
  • Serve immediately.
