I recently received an email asking me why I love lettuce wraps so much, and I replied that I simply can't resist the idea of eating what otherwise would be a fork-only meal with my hands -sorry mom!
These low-carb Greek Lettuce Wraps with chicken salad will give your taste buds a kick and brighten up your plate at the same time with all the Mediterranean flavors we love in a single lettuce wrap.
Growing up in Spain, the fresh flavors of good olive oil, olives, and cheese were abundant in our meals. Perhaps, it's why I love to add many of those flavors to my meals, especially at lunchtime.
Ingredients
What makes these Greek Lettuce Wraps a terrific family-friendly meal is that you can set up all the ingredients out on the table family-style and let everyone build their own "cup" for themselves. Here’s what I included this time:
- Chicken: cooked leftover chicken or rotisserie chicken.
- Kalamata olives: or your favorite variety.
- Crumbled feta cheese: a classic Greek cheese with a mild flavor and creamy texture.
- Red onion: you can also use shallots.
- Cucumber: makes this salad super refreshing.
- Cherry tomatoes: add them halved.
- Lime juice: to brighten up the flavors.
- Dried dill: or Italian seasoning instead.
- Boston Bibb lettuce: my favorite for lettuce cups. Other firm lettuces also work.
- Creamy hummus dressing: made with hummus, lemon juice, water, salt, and pepper. You’ll find the recipe below.

What Type of Lettuce to Use for Wraps
While you can use any lettuce for Greek wraps, Iceberg, Boston Bibb, and butter lettuce are the best varieties for holding the filling since their leaves are firmer. If you don’t have any of these around, use extra leaves to build an sturdy wrap.
How to Make Greek Chicken Lettuce Wraps
These Greek Lettuce Wraps are as easy as making a big Greek salad and dividing it up in lettuce cups. Sure, it's an extra step, but eating it out of a cup is like eating a taco, it's a lot more fun! The easy how-to:
- Make the dressing
If you’re making your own dressing, whisk all the ingredients together. Add one tablespoon of water if the dressing is too thick. - Make the salad
Combine chicken, olives, feta cheese, red onion, cucumber, cherry tomatoes, lime juice, and dried dill. - Serve
Serve the salad inside each lettuce cup and drizzle with the hummus dressing.

Toppings for Greek Chicken Salad Wraps
You can enjoy a Greek lettuce wrap just as it is and it will be an epic meal for sure. That said, who doesn’t love extra toppings? You can swap the hummus dressing for sour cream or tzatziki sauce or include more than one!
Other Mediterranean toppings that go great with these wraps are sliced mild pepperoncini, chopped roasted red peppers, chickpeas, and this delicious Cucumber Salsa.

Greek Chicken Salad Lettuce Wraps

Ingredients
For the salad:
- 2 cups chicken, cooked and shredded
- 8 ounces kalamata olives, coarsely chopped
- 8 ounces crumbled feta cheese
- ½ cup red onion, finely chopped
- 1 medium cucumber, ends cut and diced small
- ½ cup cherry tomatoes, halved
- 1 tablespoon lime juice, about ½ lime, juiced
- ¼ teaspoon dried dill, or Italian seasoning
- 2 heads Boston Bibb Lettuce, washed and leaves removed
- 1 batch creamy hummus dressing
For the Creamy Hummus Dressing:
- ½ cup hummus
- 2 tablespoons fresh lemon juice
- 1 tablespoon water
- salt & pepper, to taste
Instructions
For the Salad:
- In a large bowl, combine chicken, kalamata olives, feta cheese, red onion, cucumber, cherry tomatoes, lime juice, and dried dill.
- Scoop ½ cup of chicken salad inside each lettuce cup. Drizzle with creamy hummus dressing.
For the Dressing:
- Whisk hummus together with lemon juice and water; season with salt and pepper. Add an additional tablespoon of water if the dressing is too thick.
