Fast & Healthy Home Lunch Ideas

With more people than ever working from home, we are all in need of some good home lunch ideas. Today, I have some of the best, quick and easy lunch ideas to share with you.

These recipes are some of my personal favorites and include examples of what I have for lunch each day at my house.

For years, I worked from home while homeschooling my kids. Now, I have a small office that I drive to most days, but lately, like most of you, I’ve been staying home with the kids while they’re distance learning and doing my work right alongside them.

When I go to work, I pack a healthy office lunch for myself, but now that I’m home again, those healthy packed lunches are more important than ever.

How to Prep Lunches at Home

My lunch routine right now looks a lot like it did when I was working outside of the home every day. Most days, I wake up in the morning and prep lunch before I start my day.

Essentially, breakfast and lunch get taken care of at the same time so that I don’t have to take a long lunch break in the middle of my day.

And yes, my “lunch breaks” often look like me working through lunch while I eat a hand-held meal. That’s why you’ll see lots of wraps and lettuce cups in my work lunchboxes because they’re so easy to eat while I work.

Home Lunch Ideas | Avocado Pinwheels

Ingredients

  • 1 8-inch flour tortilla
  • 1/4 avocado, mashed
  • 2 slices (15 g) bacon, cooked and crumbled
  • 2 tablespoons (15 g) of cheddar cheese
  • 2 teaspoons (10 g) mayonnaise
  •  

Instructions

  1. In a small bowl, mash avocado and mix with mayonnaise.
  2. Place flour tortilla on a flat surface and spread the mayonnaise avocado mixture evenly throughout the flour tortilla.
  3. Top with crumbled bacon and shredded cheese.
  4. Roll tortilla tightly. Cut tortilla roll in half, and then into 1-inch pieces.
